Cinnamon Apple Bundt Cake

Ingredients

Cake

    • 1 cup light brown sugar
    • ¼ cup granulated sugar
    • 1 cup vegetable oil
    • ½ cup dairy-free yogurt of choice
    • 3 eggs
    • 1 Tbsp vanilla extract
    • 3 cups flour
    • 1 tsp baking soda
    • 1 Tbsp ground cinnamon
    • ½ tsp salt
    • 3 cups or just under 3 medium apples, chopped (we like EverCrisp®, Honeycrisp®, and SweeTango®)
    • Optional: caramel sauce to top

Cinnamon Sugar Swirl

    • ⅓ cup granulated sugar
    • 1 Tbsp ground cinnamon


      Directions

        1. Preheat oven to 325º F. Grease and flour a bundt pan.

        2. In a large bowl, combine brown sugar, granulated sugar, oil, dairy-free yogurt, eggs, and vanilla.
        3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
        4. Add dry ingredients to wet mixture, stirring until just combined. Gently fold in chopped apples without over-mixing.
        5. In a small bowl, combine ⅓ cup granulated sugar and 1 Tbsp cinnamon. Set aside.
        6. Pour half of the cake batter into the bundt pan, then sprinkle a generous and even layer of cinnamon sugar on top. Top with remaining batter.
        7. Bake for 50-60 minutes, until a toothpick inserted in the thickest part of the cake comes out clean.
        8. Allow to cool for 15 minutes in the pan, then transfer to a wire rack to cool completely.
        9. Drizzle warm caramel sauce on top and enjoy!
